Peanut Butter Chicken Stir-Fry
Serves: 4
Ingredients:

1 lb chicken breast, thinly sliced

1 cup broccoli florets
-
1 red bell pepper, sliced
-
1 small onion, sliced
-
1/3 cup peanut butter (creamy or crunchy)
-
1/4 cup soy sauce
-
2 tbsp honey or brown sugar
-
2 cloves garlic, minced
-
1/2 cup chicken broth or water
-
1 tbsp oil for cooking
Directions:

Heat oil in a large skillet or wok. Add chicken slices and cook until no longer pink.

Add vegetables and stir-fry for 3–4 minutes.

In a bowl, mix peanut butter, soy sauce, honey, garlic, and broth until smooth.

Pour sauce over chicken and vegetables. Stir and cook until heated through and slightly thickened.

Serve over rice or noodles.
Peanut Butter Beef Stew
Serves: 6
Ingredients:

2 lbs beef stew meat, cubed
-
1 large onion, chopped
-
2 carrots, sliced
-
2 medium potatoes, cubed
-
1/2 cup peanut butter
-
1 can (14.5 oz) diced tomatoes
-
3 cups beef broth
-
2 cloves garlic, minced
-
1 tsp salt
-
1/2 tsp pepper
-
1 tbsp oil for browning
Directions:

Heat oil in a large pot. Brown beef cubes on all sides.

Add onions and garlic, cooking until softened.

Stir in carrots, potatoes, tomatoes, broth, salt, and pepper. Bring to a boil.

Reduce heat, cover, and simmer for 1 hour or until meat is tender.

Stir in peanut butter until blended. Simmer for 5 more minutes, then serve.
Peanut Butter Pork Skewers
Serves: 4
Ingredients:

1 lb pork tenderloin, cut into cubes

1/4 cup peanut butter
-
2 tbsp soy sauce
-
1 tbsp honey
-
1 tbsp lime juice
-
1/2 tsp chili powder (optional)

Wooden skewers, soaked in water
Directions:

In a bowl, whisk peanut butter, soy sauce, honey, lime juice, and chili powder until smooth.

Add pork cubes, toss to coat, and marinate for at least 30 minutes.

Thread pork onto skewers.

Grill over medium heat for 10–12 minutes, turning occasionally, until pork is cooked through.

Serve hot with extra sauce for dipping.
